It&#039;s the naturally sweet sap from the maple tree which is collected and boiled down until it reaches a syrup consistency.  THat&#039;s all there is to it.
The reason it&#039;s so expensive is cause it takes something like 10 litres of sap to boil down to make 1 litre of syrup.
Good stuff though, isn&#039;t it?!

When the sap run it flows out the spigot and into a collection vehicle.  Straight out of the tree the sap is like water but slightly sweet.  From the tree, the sap is take to a boiler where it is boiled and condensed - the water evaporates and the sugars concentrate and caramelize (hence the brown color).  The darker the syrup, the stronger the flavor.</description>
