I will suggest the Flinders Ranges as the lass above has also recommended...
If you do choose the Flinders get some history about the place as it is fascinating, I know as I live on the southern edge of the Flinders...
Did you know that the Flinders Ranges are among the oldest rock formations in the world ; actually they are the oldest in the world, older than Greenland and Iceland...
When I was exploring around Blinman about 40 years ago I found a rock with some very early sea life on it, this is single cell life forms, very ancient, very basic...
I took the rock to school back in about 1970 and left it with my science teacher, that's the last time I saw it...
Have a nice holiday no matter where you choose to go, and as the lass mentioned above Kangaroo Island is also a nice spot, except the locals hate tourists, even though they need them for their economy..

I don't know what area you are heading to, but there are some nice isolated areas on the River Murray, with direct river access. Flinders Ranges also has some nice spots, but it might be a bit hot there at the moment.
Kangaroo Island has some lovely beaches as well. Contact Tourism SA for more info.
